Our qualifications will equip you with skills in a broad range of areas, including butchery, fish filleting, sauces, pastry and bread making. You’ll also gain knowledge of ingredients, food preparation and cooking methods. Alongside these you’ll study health and safety, menu planning, and catering operations - and develop crucial workplace skills. These are hands-on practical courses, underpinned by theory units to give a broad understanding of cooking and the catering industry. A programme of off-site visits and guest speakers enriches course delivery, whilst work experience will help to prepare you for the exciting and demanding realities of professional cookery.
As a cookery student you’ll be involved with a number of on and off-site events and activities throughout the year - allowing you to show the breadth and depth of your culinary skills, as well as practising the crucial planning, preparation, and management of, catered events. You’ll gain a practical skillset that will prepare you for the next step in your education or career.
